As a child I hated beets. I realize now that it was probably a combination of my young-ultra sensitive taste buds and my mother's inability to cook and serve them properly.
A nice Rose'. This one is a St. Laurent Washington Syrah from the Kirkland Uncorked festival last year.
The pan I used to boil the beets in was too small to fit the tails. Interestingly they foamed at the end. 20 minutes added to boiling salted water. Remove when a knife is pierced and withdrawn without effort.
They are beautiful. Rather than gelatinous and vinegary they are deep and firm. Tossed with a little garlic infused grape seed oil and a chardonnay vinegar they are simple and fantastic.
Beets, buy some today. You'll be glad you did.
