Beets II

Christina bought beets last night so I made this:

Penne with beets in a beet greens and basil pesto. Toasted pine nuts gave the pesto some interest. Very pleased. Also I boiled the pasta in the beet juice so it turned out pink!

You've now sold me on trying beets.
One day, after I love them, we will have a dinner rematch, with beets being they key ingredient.

I've been reading about them since I saw this post. Everything says they are very sweet. Do you prefer them with something savory to offset that? I am REALLY excited about trying them. They are so packed full of vitamins that there's no way they can be a bad thing.

If I don't like them to eat, I will just continue to drink them in the Ovaltine!

I don't get the sweetness, though I know it's supposed to be there. I think that's why they're so often served with vinagar, to cut the sugar. I like using the greens as a way to ofset some of the sweetness. They're not bitter and very tasty.
